If you’ve heard Chef Bill Corbett’s name before, you probably associate him with being one of the best pastry chefs in the nation who was based in San Francisco. But this summer, he’s doing something new: Chef Bill Corbett is having a weekly vegetarian pop-up dinner at LAMILL Coffee in Silverlake this summer. I got a chance to preview the weekly series as it began on June 30 and it will be occurring every Thursday and Fridays throughout this summer, so don’t miss out! There is delicious food and wine pairings, how can you go wrong?
The menu changes every week, but the menu I got to try has me hooked. Corbett served up the following delicious menu:
- Artichoke confit with black garlic, sheep’s milk cheese, lavash
- Celery root with sorrel puree, cocoa nib crumb
- “Falafel plate” with charred scallion tzatziki, pine nut hummus, carrots in sumac
- Basil Ice Cream with roasted strawberries, whipped ricotta, olive oil cake
- Plus wines, and the most addictive drink: Lambrusco + orange cream soda. Amazing!
This collaboration is Corbett’s first restaurant in Southern California, as he having has spent the last several years based in San Francisco as one of the most celebrated pastry chefs in the nation. Corbett has served as an executive pastry chef for Michael Mina, The Absinthe Group, the two Michelin Star team at Coi, and the Daniel Patterson Restaurant Group. Prior to San Francisco, Corbett was based in New York working with progressive pastry chef Sam Mason. Corbett was named “Best Pastry Chef” by San Francisco Magazine in 2011.
The Dinner Series will be open every Thursday and Friday night from 6:30pm-8:30pm throughout summer. Guests have the option of either enjoying solely the tasting menu for $40, or can enjoy beverage pairing with each course for an additional $20.
