Baked Chicken Nuggets


I made chicken nuggets and the recipe I used is actually a combination of two: one for baked chicken strips from Hungry Girl that I use all the time (because Fiber), and this one from SkinnyTaste.

I’ve always done it the Hungry Girl way and used eggs or Egg Beaters to coat my chicken before plunging it deep into the depths of ground-up Fiber One crumbs, but I decided this time to try the Skinny Taste way of using olive oil and adding Parmesan cheese. It’s gooood. Both add a lot of flavor to the chicken and I think the olive oil actually helps coat the chicken better.

Baked Chicken Nuggets
Quantities depend on how many chicken breasts you have.

  1. Skinless boneless chicken breasts, cut into even bit sized pieces
  2. Fiber One Original bran cereal
  3. Grated Parmesan cheese
  4. Olive Oil (lots of it)
  5. Salt and pepper to taste
  1. Red pepper flakes
  2. Italian seasoning
  3. Garlic Salt
  1. Preheat oven to 375.
  2. Spray a baking sheet with olive oil spray or lightly coat with good ol'olive oil.
  3. Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Add additional seasoning to crumbs as you wish.
  4. Add Parmesan cheese to Fiber One crumbs.
  5. Put Fiber One crumbs in a bowl, and put a whole lotta olive oil in another.
  6. Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.
  7. Put a few chunks of chicken at a time into the Fiber One crumb mixture to coat, then on the baking sheet.
  8. Bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked through.
  9. EAT! These are really good.
  1. Let me reiterate: The amount of Fiber One cereal and Parmesan cheese depending on how much chicken you've got to make. You're smart enough to figure it out.
